Overview
The Chef's Choice 120 electric knife sharpener is a three stage sharpener. It gives a professional edge to nearly all knives.
The three stages each have their own specific tasks with the first stage being optional, as you will read.
Stage 1
This stage is intended for knives that are really dull, and I mean EXTREMELY dull. Most knife owners usually skip this stage because their knives are in need of just a touch up.
However, if you do have a relly dull blade then you are going to really love stage one. It makes the precut into the blade to prepare it for fine tuning during stage two and three.
Stage 2
Stage two is the most commonly used stage on the Chef's Choice electric knife sharpener, here it angles the precut edge to its most optimum angle giving it a razor sharp edge.
When knives get dull over time, people just slide it a few times through this stage to resharpen them. Typically you only need to do this twice a year, depending on the usage of course.
Stage 3
Stage three is the final stage. Here it perfects the edge by polishing it with a lot of pressure. This results in an edge even sharper than razor-sharp.
It leaves the blade looking brand new straight out of the factory.
